This has to have been one of the best summers we have had in a long time - the settled and warm weather has just been perfection.
What better way to enjoy the summer, and the heat, than with some cool summer drinks … here are a few of our favourite recipes (both non-alcoholic and some with a bit of a kick).
June Bug (makes 4):
3 cups gingerale
4 tablespoons grenadine
4 tablespoons orange juice
3 scoops orange sorbet
Blend all ingredients together, pour into ice-filled cocktail glasses and enjoy!
Blackberry-Bourbon Lemonade (makes 1):
¼ cup bourbon
1½ tablespoons lemon juice
2 teaspoons blackberry syrup/cordial
1/3 cup sparkling lemonade
Shake first three ingredients in a cocktail shaker with ice, pour into a glass and top off with the lemonade. Garnish with 2-3 blackberries (optional).
Lemonade (makes 4):
3 cups cold water
1 cup lemon juice
¾ cup sugar
Ice cubes
Lemon slices
In a large pitcher, stir together the water, lemon juice and sugar until the sugar has dissolved. Serve over ice, garnish with lemon slices.
Tom Collins (makes 1):
60ml gin
40ml lemon juice
1½ teaspoons sugar

Sparkling water
In a cocktail shaker combine gin, lemon juice, and sugar. Add ice cubes; cover and shake until sugar is dissolved and drink is very cold. Strain liquid into a glass filled with crushed ice and 1 or 2 lemon slices. Add a splash of sparkling water; stir.
